Ponzu, Tomato and Shallot Salad

This summery salad makes the most of seasonal produce, with a fun fusion twist!

In a small bowl, whisk together the soy sauce, lime juice, rice vinegar and sesame oil.

Arrange the tomatoes on a large platter. Top with the shallot rings. Drizzle over the dressing and finish with a sprinkling of sesame seeds and coriander leaves.
